Rice flour from Kojoseifun

At Nanan, we use rice flour from Kojoseifun (Kagoshima prefecture), where rice flour is made with advanced milling technology and managed under strict quality control. Our pâtissier with her expertise in rice flour carefully selects the type of rice flour to use for each product to create the desired texture.

Free-range chicken eggs

The point we valued most when selecting our eggs was kindness and safety. Thus, we use eggs, which are key ingredients in baking, that were produced by chickens managed by breeders who value animal welfare.

Eggs produced by healthy free-range chickens are known to be one of the most nutrient-dense foods. At Nanan, we use “Kaguyahime,” which are eggs produced by Chikujo chickens bred in Fukuoka prefecture, as well as “ecocco,” which are eggs produced by Natura FARM, Ltd. (Saitama prefecture). These eggs not only add richness and depth to the flavor of our confectioneries, but also provide nutrients that are good for our bodies.

Source of sweetness

As source of sweetness, we choose ingredients that are rich in natural minerals as well as in flavor and produced in an environmentally friendly method. To name a few, we use organic agave syrup, Muscovado sugar, and Okinawan sugar cane. By drawing out the natural aroma and texture of these ingredients, we make special efforts to create confectionaries that are not too sweet.

Buzen Tanada yuzu

Tanada yuzu are harvested in the mountainous area of Buzen (Fukuoka prefecture), where cool and clear rivers flow all the way to its city ports. Tanada yuzus are known for its largeness and rich tanginess.

At Nanan, we use rare, fully ripe yuzus grown without the use of any pesticides. The black spots seen on its skin are salvestrols, which are produced as a natural defense mechanism against pathogens and have been capturing attention as they have properties to naturally kill cancer cells.

Organic ginger

Although ginger is known as a superfood and often used in herbal medicine, the part that is most rich in nutrients is its skin, which is typically thrown away. At Nanan, we procure organic ginger from ohana honpo, a retailer based in Higashi Usuki (Oita prefecture). These delicious gingers are grown without the use of any pesticides or chemical fertilizers in specially prepared soil.

Kurodamaru from Usa

Kurodamaru is a type of large black soybean, a local specialty of Usa, made by cross-fertilization between Shintanba-kuro and another variety of black soybeans. It is a health-promoting ingredient, containing premium-grade protein with a perfect amino acid score and rich in  anthocyanin which has high antioxidant properties.

Maborosi Kinako

Soybeans are often referred to as “plant-based meat” and rich in nutrients. At Nanan, we use kinako (roasted soybeans) made from organic soybeans grown and harvested by Mukashi Yasai no Tomoe in Oita (Oita prefecture) without the use of any pesticides or herbicides. This premium kinako has been slowly roasted and finely grained by the orchard owners themselves and is an extremely rare product. Enjoy the essential sweetness, aroma, and rich flavor of soybeans.

Organic Kitsuki matcha

The city of Kitsuki, located in the northeastern part of Oita prefecture, is renowned for the production of delicious Japanese tea leaves. “Organic Kitsuki matcha” leaves are grown in an area where the warm climate meets the chilly mountain temperature, creating a unique, full-bodied note and attracting people with its deep enriching flavor.

Dried fruits

We use truly the highest quality of organic dried fruits.

We select products that are good to humans and the environment, such as products certified by the “Happy Project.” These products are grown in harvested while protecting the environment by farmers who take pride in the initaitives they take to create such environment, ensuring that consumers can feel safe to buy.

Chocolate

At Nanan, we use Felchlin’s couverture chocolate.

Felchlin is an established chocolate manufacturer found in 1908 in Swiss, placing great emphasis on sustainability and fair trade.  They use carefully selected, premium ingredients, such as cocoa beans, milk, and powdered milk, to make high-quality chocolate based on their traditional manufacturing methods.

Though their chocolates are only made in small batches, it is loved by chocolatiers around the world for its fine quality.
